which cake fillings need to be refrigerated?

I am making a cake with fondant. I know its recommended that you do not refrigerate fondant once the cake is covered.

I am looking for a chocolate mousse filling that does not need to be refrigerated. Thank you.

Hi Celeste,

I would recommend the whipped chocolate ganache filling. It's heavenly and it can be stored at room temperature for up to 48 hours.
